MCM Cara Ruby follows a recipe similar to MCM's Melanoidin Gold, with a high level of air recirculation in the kiln to produce a similar effect of saccharification rest found in mashing.
Higher curing temperatures are also used to drive dark melanoidin flavors that add richness to any style of beer. It is copper in color with flavors of sweet graham cracker and hints of caramel. Typically used at <5% of the grist bill, no more than 15%.
