MCM Pale White Wheat Malt is made from low protein soft white winter wheat. White Wheat has a low enzyme package, high extract potential, and a lot of haze development.
Flavors are very clean and doughy, and become bready and sweet in the boil. This malt is typically used at <50% in the grist bill but can go up to 80% if rice hulls are employed. MCM Pale White Wheat is well suited for all wheat beer styles and hazy IPAs.
